Method

Thinly slice one small potato and steam the slices until almost cooked. This ensures they’ll finish cooking perfectly in the oven.

Place the steamed potato slices in a bowl and coat them thoroughly with olive oil, salt, and pepper, being careful to keep their shape.

Preheat your oven to its highest setting, ideally close to 400°C, or if using a home oven crank it up to the highest setting.

Stretch out your pre-prepared pizza dough on a floured surface.

Spread 3 heaped tablespoons of white truffle sauce evenly across the base leaving a 3cm rim for the crust.

Carefully layer the potato slices on top, ensuring even coverage.

Add pieces of Fior di latte mozzarella and finish with the thinly sliced pancetta.
