Introducing our “Il Carnivoro” pizza, a mouthwatering combination of three delicious deli meats that will satisfy your cravings.
This pizza is a flavour-packed masterpiece featuring pancetta, Napoli salami, and prosciutto. With pancetta crisping up beautifully in the oven's high heat, spicy Napoli salami providing a bold punch, and delicate prosciutto added after baking for a tender finish, this pizza is a firm favourite. Ingredients
- One 260-gram dough ball (we recommend using our Classic Pizza Dough, which should be proofed for 3 to 4 hours before cooking)
- San Marzano tomatoes (hand-crushed for the best taste)
- Maldon salt, to taste
- Semolina (for dusting, we recommend Flour Semolina Extra Fine)
- 100 grams of Italian Mozzarella (for top-quality taste, use Fior di Latte)
- Salami (choose between Ventricina for a spicy kick or Napoli for a milder but still tasty flavour)
- Pancetta
- Thinly sliced Prosciutto (to be added after cooking)
- Parmigiana Reggiano cheese (to be added after cooking)
- Hot honey (optional for a sweet-spicy finish)
Method
Note: To achieve the perfect texture, be sure to set aside 3 to 4 hours for the dough to proof before cooking.

Preheat your oven to 400°C.

Prepare the dough: On a lightly floured work surface, take your dough ball and press the air from the centre to the edges with your fingers. Stretch the dough into a 30-centimeter base.

Top the pizza: Spoon about 4 tablespoons of hand-crushed San Marzano tomatoes onto the dough. Sprinkle a pinch of Maldon salt for flavour, and then add the mozzarella cheese and place the salami (Ventricina for spice or Milano for a milder flavour) and pancetta on top.

Bake the pizza: Place the pizza in your preheated oven and bake for 10-12 minutes, or until the crust is golden and crispy and the cheese is bubbling and melted. The pancetta should be crisp, and the salami should be slightly curled, adding that perfect crunch and flavour.

The prosciutto’s delicate, melt-in-your-mouth texture contrasts beautifully with the crispy pancetta and salami.
